Amchur

 Description

Amchur (or Amchoor) is a uniquely Indian spice made by powdering dried green (unripe) mango flesh. It gives tart acidic flavor to many Indian dishes. It is especially used in marinades and achar (chutney).

Ingredients
Raw green (unripe) mango (with more flesh and lesser fiber)

Preparation

  1. Peel raw mangoes a vegetable peeler. Slice into long thin slices.
  2. Immediately sun dry for couple days by spreading on a single layer. Sun dry till mango slices crisp and brittle.
  3. Ground it into amchur powder.
