Chicken Tikka Masala

Chicken Tikka Masala is an Indian curry sauce dish made from chicken tikka, which is backed or grilled skewer chicken, with a creamy tomato based sauce. Chiken Tikka Masala is perhaps the most popular dish in Indian restaurant in the west. There are many stories claiming the origin of this mughlai inspired dish. According to all urban legends, chiken tikka masala was originated in the United Kingdom in 60’s when a chef was asked for a (tomato-based) curry sauce with the ordered chicken tikka. The presented recipe is a simple chiken tikka recipe but still retains its essence.

Ingredients

Tikka
2 lbs of boneless and skinless chicken breasts (cut bite-size)
2 tablespoon garam masala
2 tablespoon ghee or melted butter
1/2 cup yogurt
2 tablespoon garlic and ginger paste (optional)

Sauce
2 red onions chopped
2/3 cup half and half
3 tablespoon paprika
1 tablespoon garam masala
2 cinnamon (dalchini) sticks
1 cup crushed tomatoes
1 tablespoon ghee or butter
¾ teaspoon salt or salt to taste

Preparation

1	Marinate chicken with everything listed under “Tikka” for ½ hour or longer.
2	Cook in high heat over stove until partially done (Alternatively, bake (450 F) for 12 minutes). Remove.
3	For sauce, heat ghee. Add onion, cooked until slightly caramelized.
4	Add tomatoes, garam masala cinnamon stick. Simmer for few minutes.
5	Lower heat, add chicken and half and half. Let it simmer (at least 15-20 minutes) in low heat until served.
6	Serve with basmati rice.
